Espresso is far less forgiving of grind-size inconsistency than filter methods. A few dozen microns of variance that would go unnoticed in a pour-over shows up immediately as channeling, a thin or sour shot, or a puck that won't hold pressure. That's why the grinders that do well here share two things: a burr set precise enough to hit and repeat a narrow grind window, and a workflow, timed dosing, single-dosing, or on-demand, that doesn't leave stale grounds sitting between shots.
