Single-dosing means loading only the beans you need for the brew in front of you, no hopper sitting open with beans slowly staling for days between refills. The trade-off is that any coffee left behind in the chute or burr chamber (retention) contaminates your next dose with old grounds from a different bean or roast date, so retention isn't just a nice-to-have spec for these grinders, it's close to the whole point of the design.
